Fukamushi refers to a deep steamed Sencha. This tea was grown in Shizuoka Japan in spring of 2012. It has been stored in a large fridge devoted to high quality Japanese green teas right here in Seattle. The flavor and health benefits have been perfectly preserved.
A yuzamashi is a vessel used to cool water when brewing Japanese green teas. Boiling water from the kettle is poured into the yuzamashi and then into the chawan (tea bowl) or kyusu (teapot) when it has cooled to the proper temperature, as determined by the type of tea being brewed.
